Wild Eggs

Our roadtrip to Chicago, (yes roadtrip, I was the idiot that waited too long to buy plane tickets), brought us through Louisville, KY and after a five hour drive we decided to spend the night. In the morning we made our way to a well known Louisville eatery called Wild Eggs.
We walked in and it was overwhelmingly crowded. The wait was over an hour but they had a “bar” area that was first come first serve. This bar was the best idea I have seen in a while. In a U shape, there were maybe 10 seats and under the bar was everything our waiter might need to make our experience a fast and flawless one.
The decor was egg inspired, the light resembled eggs, the walls were filled with eggs and even the chairs looked like eggs.
We decided to order the Omelet with broccoli, tomato, mushrooms, bell peppers, and spinach served with potatoes and the option of a whole grain muffin or a pancake at $9.95. The potatoes were very fresh and a mix of red and Idaho. Omelet and Potatoes Rated: 7/10
Guess what option I chose?
The most heavenly pancake I have ever eaten! First off, I realize this is an Egg restaurant but they have perfected the art of the pancake. The batter was fresh and not too dense and had the perfect amount of sweetness to it. The salted whipped butter on top and the powdered sugar sprinkled ever so lightly completed the balance of flavors dancing across my palate. I literally have had dreams about this pancake since I had it. Rated 9.5/10

If you are a breakfast person, I HIGHLY RECOMMEND this place!
